Mango Sticky Rice

I first heard about Mango Sticky Rice during my stay in Thailand. We found it at one of the night markets and it was good! Then when we traveled to other markets, and some of them just didn't hit the same. Then when I came home and went to a Thai restaurant and tried it, they did a good job! Enough that my mom liked it so much she bought the ingredients and asked me to make it at home (glad she believe I can make stuff like this) Turns out to be pretty easy, you should definitely try it. Of course, it taste best with ripe mangos and warm rice!

Ingredients:
3 mangos
2 cups of rice
1 can of coconut milk
1/2 cup of sugar
1 1/2 tbsp cornstarch
sprinkles sesame seeds
Directions:
Wash 2 cups of rice. Drain and add 2 1/2 cups of water. Bring to a boil for one minute then down to a simmer. Cover with a lid and let it simmer for 15-18 minutes.
Turn off the heat, keep the lid on for another 10 minutes. Dissolve the sugar in the coconut milk in small saucepan.
Pour half of the coconut milk into the sticky rice and mix it. With the remaining coconut milk, mix in the cornstarch. Cook on low heat for 1-2 minutes until the sauce thickens.
Prepare slice mango as toppings. Then assemble! Scoop some rice, pour some sauce, add the mangos, sprinkle the sesame seeds, and tada! You're transported to Thailand.
